Watermelon Salad 🍉 

• Red onion(1)

• A Cool Cucumber(1)

• Feta Cheese 

• Avocado (1)

• Mint

• Basil

• Serrano Pepper(1)

• Dressing ( I squeeze half a lime ) 

This recipe is not only vibrant and cooking on those hot Summer days but it’s also easy to prepare. 

1 Dice the red onion 

2 Cut the cool cucumber  into small cubes.

3 Cube your avocado into slightly larger cubes, if your prefer the creamy texture over the crunch. 

4 Dice your pepper. This is all on you!! Add to your hearts content.

5 Mint & Basil , if your children have them tear the mint and basil and sprinkle on top. 

6 Last , your feta. I like a lot of feta , it’s betta! 

7 For complete freshness , I squeeze half a lime. Feel free to use any dressing of your choice.

 Chicken Katsu 

-Chicken Katsu is so versatile. It can be served with rice and your favorite vegetable.

-Pair up your Chicken Katsu with your favorite salads. 

Nina’s Favorite : Served with a toasted wheat burger bun , mashed avocado with a pinch of salt and Asian Slaw. 

Don’t worry ! I’ll share that recipe too. It’s SUPER EASY!

Asian Slaw : Ingredients 

• 1 bag of broccoli slaw 

• 3 scallions

• 1 cup cilantro 

Asian Dressing :

•3 tablespoons olive oil 

• 1 tablespoon toasted sesame oil 

• 1/4 rice wine vinegar 

• 1/2 tablespoon soy sauce ( I use low sodium )

• 1/2 teaspoon minced garlic 

• 1/2 teaspoon chili flakes or chili paste 

Combine the dressing and slaw. 

Now , let’s move on to the Chicken Katsu… 

-Side note : I recommend using a cast iron skillet. 

Chicken Breast Prep : 

• chicken breast ( can also use tofu ) 

• Salt 

• Pepper 

• Flour 

• Battered Eggs

• Panko Mix

Prep: Preheat oven to 350F.

While that’s getting ready …. 

1 Pound chicken breast into 3/4in thick cutlets. Season chicken breast with salt and pepper.

1 Prepare your Katsu prep station … 

1 You’ll need 3 bowls one with flour , battered eggs and , the panko mix. In that order you’ll coast the chicken breast. 

2 Once coated pan sear it until the coating is crispy and golden. It should be quick , remember we’re still cooking the chicken all the way through in the  oven. 

3 Cook chicken in 350F oven until fully cooked.
