In the Kitchen

For this months issue of “ In the Kitchen” I’ll be sharing a recipe for a mouthwatering Fried Oyster Poboy with its creamy companion, Rémoulade sauce. 

I also decided to switch things up a bit this month. So I’ll be sharing an awesome Taco recipe , but there’s a twist … it’s VEGAN!

Fried Oyster PoBoy 

✨ Toppings

• 10-inch slide or French bread , toast according to preference. 

• Shredded iceberg lettuce 

• Thinly sliced tomatoes 

•  dill pickle chips

✨ Rémoulade Sauce 

• 3/4 cup mayonnaise

• 1/4 cup minced dill pickles

• 2 tablespoons horseradish

• 1 tablespoon hot sauce

• 1 tablespoon Dijon mustard

• 1 tablespoon Worcestershire sauce

• 1 tablespoon fresh lemon juice

• 1 minded garlic clove 

•  salt & pepper 

✨Now time for the nitty gritty , Oysters

• 2 cups all-purpose flour

• 1/2 cup of cornmeal

• 2 tablespoons Creole seasoning

• 4 large eggs

• 24 freshly shucked oysters 

• 2 quarts vegetable oil, for frying

•  salt

✨ Directions : 

1 For the sauce , combine all ingredients together and season to taste. 

1 OYSTERS 🦪 : 

In a medium bowl whisk together the flour, cornmeal, and Creole seasoning. In another  bowl whisk together the eggs and 1/3 cup flour mixture. Consistency should be similar to batter. Adjust consistency with additional flour mixture if you need to.

1 Place oysters in flour mixture and toss , coat evenly.Shake off excess flour. Transfer oysters to egg mixture and turn to thoroughly coat. Return oysters to flour mixture. Toss gently in the flour mixture to fully coat. Repeat dredging process. 

1 In a large Dutch oven, heat oil over medium-high heat to 375°F. Add the oysters to the oil and cook, stirring occasionally with a spider skimmer, until golden brown or for 2 to 3 minutes. 

1 Slap some the  rémoulade to both sides of the bread. Ads lettuce, tomatoes, pickle chips, and oysters , maybe more sauce! 


Vegan Tacos Recipe 🌮 

🌮 Ingredients 

• 2 tbsp coconut oil

• 12 oz plant-based ground or lentils (green or black), or extra-firm tofu (cut into small chunks)

• 1 tsp onion powder

• 1 tsp garlic powder

• 1/2 tsp cumin

• 1 tbsp chili powder

• 1/4 tsp chili flakes

• 1 tbsp nutritional yeast ( can be found at Whole Foods and Trader Joe’s )

• 2 tbsp tomato paste

• 2 tbsp soy sauce

• 2 tsp maple syrup

• pinch sea salt

🌮 Directions

1 In a large skillet, combine coconut oil and vegan meat options. Cook on medium heat for 3-5 minutes, or until the vegan meat starts to brown. Then add the spices, onion powder, garlic powder, cumin, chili powder, chili flakes, nutritional yeast, tomato paste, soy sauce, maple syrup and dash of sea salt. Mix together to combine until warmed and lightly browned.

2 Prepare taco and add toppings. 


🌮Vegan Queso Recipe 

🌮 Ingredients 

• 1 cup raw cashews

• 3/4 cup hot water , splashes more if needed

• 2 tbsp nutritional yeast ( can be found at Whole Foods and Trader Joe’s )

• 1 clove garlic

• 1 tsp chili powder

• 1/2 tsp onion powder

• 1/2 tsp cumin

• 1/2 tsp sea salt

• 2 tsp hot sauce

🌮 Directions 

1 Toss everything into a high-speed blender, and blend until smooth and creamy. Add hot water for a thinner consistency.
