World Health Day

For this months issue and in honor of “World Health Day” on April 7th , I’m bringing two simple and easy meals that are not only super delicious but also Keto friendly. My first dish will be a low carb, no bean Keto friendly chili.

Next , will be dinner. I will be sharing one of  my favorite, it’s easy and quick. 

Keto chicken and broccoli stir fry. 

Both dishes will have a new secret ingredient that I won’t mention right now , you’ll have to come back later and see! See you then ladies !!! 

New ingredient Alert , 

I have been taking collagen for the past month. My mother and I have seen awesome results. Hair growth , radiant skin , my nails have grown , and not to mention how I feel internally.

My mother has seen a difference in her crows feet and cellulite on the back of legs. 

The multi collagen I use is by Dr. Josh Axe , it’s called Ancient Nutrition. It’s flavorless and can be added to any liquid or dish. I add one scoop of multi collagen powder to everything. 

It can also be purchased at Whole Foods. 

***RECIPES***

Keto Chili , beans… who needs em’ 

Ingredients 

• 1-2 lbs 80/20 ground beef

• 2 garlic cloves , chopped 

• 15oz low carb tomato sauce , I use Rao’s from Whole Foods.  

• 7oz tomato paste 

• 10-12oz diced fire roasted tomatoes 

• 1 cup beef bone broth 

• 1 medium size jalapeño 

• Green bell pepper 

• Yellow bell pepper

• Onion 

• Sour cream 

• Cheddar Cheese ( toppings )

• Avocado oil 

• 4-5 slices of thick center cut bacon  

• 2 tablespoons of you’re favorite hot sauce ( optional) 

• 2 tablespoons chili powder 

• 1 teaspoon cumin 

• 1 teaspoon garlic powder 

• 1 tea black pepper 

• 2 teaspoons of dried oregano 

• 3 bay leaves 

Directions :

1 Chop peppers , garlic , Jalapeño and onions into bite size pieces. 

2 Chop bacon into bite size pieces 

3 Heat pan on medium low heat , wait until pan has heated before adding the oil. Add 1/2 a tablespoon of avocado oil.

4 Once pan is heated add in your bacon. Allow bacon to brown. Add chopped garlic.

5 Sauté until garlic is fragrant. Add in the onions , sauté until onions are translucent.

6 Add in the bell peppers , jalapeños and bay leaves. 

7 Add ground beef and allow it to brown.

8 Add the beef bone broth , tomato sauce , diced tomatoes , and the tomato paste.

9 Lastly , add in all your spices. Add more or less depending on your heat tolerance.

10 Mix well , bring heat to medium high and bring the chili to a boil.

11 Stir , turn heat to low. Let simmer for no more than 20 minutes. 

12 Serve with shredded cheddar cheese , and sour cream , and chives ( optional ) oh and I did I mention , sour cream!!!

Keto Beef & Broccoli Stir Fry 

Ingredients 

• 1/4 cup Beef broth 

• 1/2 teaspoons of Xantham gum. Can be found in most stores in the bakery aisle.

• 1-2  tablespoons of avocado oil 

• 1-1 1/2 lb of thinly sliced steak 

• 4-5 cups of broccoli florets , frozen will cook quicker.

• 1/2 cup soy sauce 

• 2-3 tablespoons of granular sugar . I use Swerve. Keeping it Ketoly Sweet. 

• 1 tablespoon of minced garlic 

• 2-3 teaspoons of ginger or ginger paste

 DIRECTIONS 

1.In a large skillet over high heat, add 1 -2 tablespoons avocado oil. Add in the sliced steak, cook until brown on both sides. Remove from pan .

1 Reduce heat to medium , add 1-2tablespoon avocado oil. Add in your  broccoli florets and sauté’ until tender, about 10 minutes should do. Add a little water to keep from burning the florets.

2 Add the steak back to the pan  Add in the soy sauce, swerve sugar ,garlic, ginger, broth, and xanthan gum( thickens the sauce ). Stir until the steak and florets are evenly coasted.  Allow to  thicken for a few minutes.

3 Serve alone or with cauliflower rice.
